I onky have experience with bisq. I believe peach is not in USA. Pros are P2p bitcoin exchange. Cons are whatever orders are out there are what is available. Might not always be what youre looking for.

Also this would only protect from losing data from hardware issues or something. Both copies in the same location means fire risk. You may want to look into large file cloud storage or something in the future.
Just meaning you save a copy of the project on an extra hard drive, lets say once or twice a day depending on progress. That way if something happens to the first drive you havent lost everything. There are better ways to accomplish this, but this will get you something quickly.
