i guess you could do it all in one flow, but i guess i do them separate to make them just how i like, and then when they are cooked with the egg/potato mix, they dont cook further.
on top sounds like nice presentation, but in the past i would caramelize onions separately, and then mix them into the egg/potato mix when you make the tortilla
