It is hard to keep seeing the posts of someone who ghosted you. You value their content so you don't mute them. Yet every time you see them it also stings just a little. What a complex emotion that I do not quite comprehend.

Dude. As someone who use to work at a certified apple repair shop back in the day. They have tools to see and access everything. Your biometrics. Your security delusions. All hilarious.
They see everything you do. There is no privacy. When there is no source code available to audit and no significant access to the device software. You trust that the wizard of oz is an actual wizard and not just a man behind a curtain pushing buttons.
The only privacy and security you have is against normal people and thieves. Anyone that works at apple, or has authority to exert leverage onto the company knows all that is on your device.
So beware.
