* The timings for sourdough require planning in advance, but in terms of the bits requiring intervention/effort it's not far off making regular yeast bread. The starter was the easy bit - 25gm wholemeal rye flour to 50gm 30C(ish) water once a day for 5 days, in a Tupperware style sealable container. Somewhere warm. I replaced what I used at the same ratio and put it in the fridge for the next time. I used a rye starter because it's less effort and easily transmuted because of the abundance of natural enzymes.

The downsides are that everything takes longer. It's 5 stages:

1. Make a production sourdough (mix some starter with flour and water) and wait for it to come to life - expand in size like regular bread. It took 3 hours in a room ~24C. It varies with temperature and age/quality of the starter.

2. Mix the production sourdough with more flour (or a mix of your choice), salt, and water. Wait an hour for the gluten to relax.

3. Knead to fully develop structure (this varies with the type of flour used). Prove for between 3-5 hours in a warm place or for longer in a cooler place.

4. Bake for 10 minutes at 220 and 40 at 200.

5. Cool.

I guestimated a tasty mix of wholemeal dark rye, wholemeal wheat and strong (bread) white flour. It all worked quite well. Nice bread etc. which will last me a week. In terms of labour it was probably 2hrs including the starter. Excluding the starter 1hr including baking but needed a predictable schedule.

Potential refactoring:

- Extra high gluten (16%+ protein) bread flour mixed with a minimal amount of starter, then salt and water until the gluten is very well developed. Then put it in a proofing basket at room temperature overnight.

The idea with the extra high gluten is to front-load all kneading, resist gluten damage over a longer unattended proofing and provide, potentially, structure for other flours if added.

- Mixing temperature - thermal regulation of the mixing or using high speed mixing to produce higher temperatures (obvs. Chorleywood inspired - to partially kickstart the reduction of wheat starches).

- Ditch the starter and maintain a production sourdough in the fridge.

- Flour processing/chemical aids. Maybe PH test the starter and adjust flour PH.

- Temperature control (hard in a domestic setting).

I'm going to test this over the coming months/years. And buy more second hand books on sourdough and occasionally read about flour biology/chemistry.

As a kind of side hobby that I'm interested in but not that interested in. A minimum effort, slow motion, hobby *.

Framed #625 (nah. Usual Saturday. I worse a thin, white, summer Tour De France merch teeshirt, a thicker black Diadora teeshirt, a green wool mix jumper, and a black Polartec fleece over the top of that. Snug. It wasn't that cold but because we had an unusually warm middle of the year somewhat cold weather (family in Sweden are currently into the daytime minus figures) have come as a shock to many. Obviously younger people don't give a fig and just wear whatever, but on the mean streets of West Kent it was like an overpriced hiking store had given away all its stock, because it was like what I was wearing plus thermal jackets, boots, gloves and hats. People were glad to finally, somewhat, justify the expense. Waterstones currently have Catan (I have the family edition) and Ticket to Ride (haven't got) half price - which I would buy, but several younger family members are refusing to play with eachother, which is fair enough because the key elements of games like that become creative exercises in how to stab eachother in the back in the funniest and/or nastiest ways. Exploding Kittens and Shards of Infinity became a study in conflict resolution. Which is why Spirit Island is good because it's co-operative but it's not suitable for a 4.77 year old. People were very good with my nephew whom is quite loud, somewhat verbal, gregarious, and built like a medium gorilla.)

Framed #624 (nah. Last night I ate a kebab with upwards of five whole chilli peppers and a very hot sauce. It was at least 50% salad - it was dressed in, I'd guess: light olive oil, lemon, sumac, white pepper, a small pinch of cumin and a little salt. It had shredded red cabbage, regular cabbage, onion (Spanish type), lettuce (I'd guess baby gem or a cousin of it) and sliced tomatoes (beef tomato - the big ones that still tase of tomatoes). A big part of judging a kebab is the quality of the accoutrements. I have also started a rye sour dough starter which has triggered a memory of when I accidentally burnt most of the skin off my right hand. Not the accident itself but the smell of it when it went smelly (high strength silver sulfadiazine cream + emergency antibiotics followed). However I'm fairly sure a three or four day away sourdough bread will make me feel less bloated and stupid the next day than a large British/Turkish kebab. It was a nice treat and I don't eat like that often. It had consequences. Despite the protein it is not brain food. Brains would probably be healthier.)

Gnomevember picture (1/x). Actually just testing a USB SD card reader stick from Temu and took a picture for the card. It's how the Cylons disabled the Imperial Fleet. It hasn't subverted my computer and seems to be a perfectly good, a little flimsy, SD card reader (£1.36). I like the picture. Nikon D90 f/1.8D @ ISO equivalent 200 f/2.8 (f/5 is the sharpest with this lens and that sensor - diffraction limited) developed with RawTherapee.

With supply - if a graph suddenly goes up, but before it went up it was going down, draw a straight line across from where the graph started going down to where it started going up. If substantial numbers of people find very simplistic explanations of how the world works plausible it is akin to people clicking on adverts or click-bait for "one simple trick" or "doctors hate him" or click-bait in general. It seems one half of the world wants to be condescending and the other half is trying to get people who believe there are structures inhibiting the ultimate simplicity of the world to vote for them and do what they want. Framed #620 (without giving the film away, the only good one was the first one. Last night I watched the Neon Demon - which was a good film but an unsettling one. It makes models unattractive, which given that's the point of modelling, not to get too Zoolander about it, is a testament to Nicolas Winding Refn - whose Danish films are superb. In my minimal experience of models they weren't like that. Maybe some are. Maybe at the very top it's different. It reminded me somewhat of Nicolas Roeg films in that it is a 'trip through something' - making the visual and audio aspects of direction intrinsic to the screenplay. Some films could seemlessly transition between a film or a play and a minority that are forever fixed as film. The Neon Demon is fixed as a film. Films that can't be transmuted into plays are notable if they manage not to be crap. Films that can't be plays are like the real life ineffable.)

Framed #618 (I have not seen that film. On October 7th after Hamas launched an evil attack the most prescient message I got, before a single missile had been fired in response, as it happened, was that outside of a narrow range of circumstances Hamas have just an-heroed the Gaza Strip, and not like an-heroeing the Gaza Strip was a good thing, like it was an extremely tragic thing. I am not paraphrasing the an-heroed bit. I hope that something unexpected happens and peace can be found and war, I don't know if this comes as a shock to anyone, is not good. It's sometimes necessary. The civilians deliberately attacked that kicked it all off are as civilian as the people caught up in it. That has always been the case in war which is why I fully support not getting to a war in the first place and concessions from all sides which go beyond slogans on placards.)
