Why?
1) I mint a token at a mint: I use my node, might deanonymize me to some degree as a user of that mint.
2) I now have a bearer token. I can send it to anybody "out of band"
3) They redeem it to pay an LN invoice

the hope is, that custodial services will use this instead of the outdated "i store your IOU in my centralized DB and track all your transaction" model.
Wallets can implement redeem, and it would probably be pretty simple. but it's also simple to just redeem it yourself on redeem.cashu.me and send it straight to your self custodial LNwallet
