Bitcoin Knots is similar to bitcoin core. It was built so that you have more control than bitcoin core. I wouldn’t know personally because it is taking forever to download it.

2 years ago the initial block download took 48 hours on a pi and less than 36 on a compute. It depends on hardware obviously.

Today it has been over 4 days and I’m only at 80%.

The extra “stuff” we are storing is getting bigger and bigger really quick. What is the fix?

Note: if you have seen my website after scanning the QR code (shows you my business website address) and you have suggestions/ideas for how to make it easier for people to pay with lightning for example (currently the payment processor is FortisPay and the basics of it are credit card payments, but it doesn't have to be limited to that) let me know in comments. One way I've thought of how bitcoin payments could be done is if an order would be submitted via https://btcpayserver.org/ so that if people don't want to do credit card payments, they could do it that way - and btcpay does allow for use of lightning - but that's just one possibility. Another is bolt12 which is described here (but which would require use of certain wallets which implement it): https://bolt12.org/ux-design#reusable-payment-requests Let me know what you think about how you'd accept payment using lightning, I'm leaning towards creating a subpage which is presents a btcpay option so people can use it in lieu of the standard card option if they want.
