As to how/where to add them... that totally depends on your client of choice but there should be a relays or network section under settings somewhere.

Yup. I lived in the Seattle metro in the early 90s when grunge was just taking off and saw most of the bands that would end up blowing up. You could see them pretty regularly back then. I think I first saw them in early 1990 at the University of Washington with 3 other locals at a student-run type of show. Paid like $5 or something stupidly cheap like that at the door.
The coolest though was they played an impromptu set at Beehive Records and the place was packed like sardines with people on other's shoulders, on top of racks, wherever you could get in. Was originally supposed to be a small listening party and album signing, but when the handful of people they expected turned into hundreds of us lined up down the block, Kurt decided to play instead.
Agreed. I only use Nostr on desktop and right now I have to move between 3 different clients to get what I'd consider a full-featured experience as certain things that work well in one client don't in the other, sometimes search doesn't work at all in one or more of them, etc.
For people that come over and then compare it to Twitter, it's a frustrating user experience and will turn them off. If they don't buy into (or don't believe they need) the anti-censorship component, they will not stick around.

https://zap.stream and https://nostrnests.com are the two options most people use. I believe some clients are building them into their offering... like Nostur I believe has added one of them.
There are some relays that are now blocking them so adjust your relays until it's gone.

Is there any method to the madness on how it displays? For example, using your Jack screenie, how would someone determine the right one when there are impersonators? Does it sort by follows so likely the legit one is up top?
