Did a success. Much great success!

All at 120ยฐC/248ยฐC. 6 hours in le open Dutch. Then placed on an onion bed. Then another 1.5 hours in le open Dutch. To finish, 2 hours in le closed Dutch.
So friggin good.

Yesterday's brisket was astonishing. ๐ฅฉ 
6 hours in a Dutch oven, lid off.
Then placed on a bed of onions.
Another 1.5 hours in the Dutch uncovered.
Then a final 2 hours covered in the Dutch to finish and soften!
All at 120ยฐC/248ยฐF.
