I expect this to increasingly happen with AI. Eventually the big providers like OpenAI and Google will have to recoup the costs paid for their massive data centers by raising prices for their API access. The benefits of local hosting and open source models will become even more attractive.

Not that I know of. You’d probably have to set it up as a stand alone container. I’d guess that’s what the Umbrel app essentially does anyway though.

I suppose you could make a system as advanced as you want, but potentially just the cost of a low-end computer and a couple cameras (+ configuration time). I believe there’s an Umbrel app for Home Assistant.

A home security system can be self-hosted with Home Assistant and accessed remotely if you set up a SSH tunnel. It would take a very sophisticated attacker to make that into a liability against you, IMO.

Multisig is nice for making it harder for them to come away with a haul, but it won’t save you from getting tortured. “I can’t give you the coins” is the same as “I won’t give you the coins” when it comes to whether/how they retaliate. Means of defense (firearms + training) and vigilance (surveillance system) need to be at the top of the list of safety items.
