I prefer it boiled, the leaves too, then with olive oil and lemon. Classic greek... Rarely raw.
Also with yoghurt after boiling it (my yoghurt)
But you can make fresh spaghetti with beetroot juice in the mix.
I know you don't eat some of this stuff. Just mentioning...
My mom used to make beetroot salad cooked and I never liked it, because she added pickled herring fillet (rollmops) 🥴
With my husband I learned to eat beetroot raw as a snack with lemon, salt and chilli. Which I like a lot.
Yes, beetroot juice makes home made spaghetti looking really pretty :) Home made spaghetti is surely much better then industrial ones.
I like the herring fillet beetroot combo 😀.
Also the yoghurt takes a nice colour from beetroot.
Australians eat a lot of beetroot. I guess that they might have some interesting receipes.
Now i said receipes, i suggest you to look for orthodox monk receipes. They eat a lot of vegan stuff in the monasteries and they have interesting receipes. Old ones (battletested 😀) too
