If an app is available through GooglePlayStore and I'm setting up Graphene on a google phone, does that mean that I can definitely use that app privately? Or are only some apps compatible with Graphene?

I've run into a few that won't work without Google Play Services. You can set up a sandboxed play Services though and it should work.
I probably should not have said *everything work* without qualifications like this.
Most apps work. Some may require sandboxed play services.
This was also my experience. Most will work, a few may not out of the box and you have ways of making them work
ok. And if I don't know how to do this, I'm assuming I'll be able to figure out it.
Sandboxing = putting some apps into their own walled area so that they can't tap into the other data on the phone?

I believe all apps are sandboxed by default. For sure Google. If you go to the graphene app store you can install Play Services.

Everything is compatible but to my knowledge using *normal* apps on Graphene does not make them private. Meaning, just because you are using an alternative OS doesn't mean your use of the Pinterest app is any more private than of you were using Google's native OS.
