Should I be stirring the pulp-ish stuff into the liquid, skimming it off, just leave it, etc? I'm concerned about mold potential.

Looks like it's still fermenting, if so leave it alone

Definitely still fermenting

It's just yeast being frothy then. It will calm down and most of it will sink to the bottom for racking off later.
