I spent 4 hours in 2 towns looking for a simple offset smoker.

Nada.

Had to get the thing I swore I would never use. How do you not find an offset smoker at a Home Depot, an Ace Hardware, a local farm and ranch store, or 2 Walmarts?

Traeger’s rule.

Though the best things I have ever cooked outside have been on offset smokers: they have on occasions yielded the worst. Pellet grill gets you 90% of the way to the best ever, every time.

Need a barrel and some tig welding skills. Honestly would have just ordered something for delivery.

It gets the job done and is easy to use. I use mine almost everyday. Even for baking stuff just so I don't have to heat up the house with the oven.

I look online first, set your store and click the in-stock filter. Lowes, home depot, menards, etc. Ace tends to limit their stock to one brand. Maybe better luck with a true value or do-it-best?

So I got one at Home depot, butni did have to buy it in two parts and assemble it myself.

Is that what you would use to make biochar?

No. The pellets get burned to ash.

Weber kettle grills make great offset smokers.

I own one. I never use it any more. The cost of pellets to run it probably had more to do with it than anything else. But, I am spoiled with my enviropak.

I built my BIL a ridiculously large offset smoker. He uses it maybe 2x a year.

I'd rather have something I'd use every day.

I love my Kamado Joe.

Been looking at offset smokers on Facebook marketplace. Rarely see Kamado Joe's but there's always a few offset smokers half the price of a new one.

I'd never buy a second hand pellet smoker though.
