Id probably stuff knife holes with parsley and garlic, thens alt and pepper, put it on a bed of potatoes and onions and carrots with a little chicken or beef stock and slow cook it at around 275-300 in a dutch oven for a few hours.
no broth, the veggies and the fat is more than enough moisture, IMO. Personally I'd ditch those, too.
