Id probably stuff knife holes with parsley and garlic, thens alt and pepper, put it on a bed of potatoes and onions and carrots with a little chicken or beef stock and slow cook it at around 275-300 in a dutch oven for a few hours.

I like cooking and want people to be happy with what they eat. Even crotchety ol' UTXO

no broth, the veggies and the fat is more than enough moisture, IMO. Personally I'd ditch those, too.
