Removed Windows off the PC, and went with Ubuntu, mainly because that’s what my brother always used. What other Linux OS are there to try? What one do you like most and why?

I prefer Windows. I don't have frustrating compatibility issues and you can always run whatever Linux app under virtualization very easily. I run all my home lab stuff on Raspberry Pis.
I am using fedora silverblue. There is also a more traditional fedora workstation just like there are different flavors of Ubuntu.
A tip is to try them out in GNOME boxes. That way you do not need to reinstall the entire computer to try out something new.
There are no wrong choices, pick what works well for you.

it's also always good to have a USB stick with Tails OS on it
There are so many Linux distros, you can go down the rabbit hole for 20 years. I've tried tons of distros and always end up back on Mint with Cinnamon UI.
