The freeze dryer finally finished the batch of peas yesterday morning which turned out awesome. I really need to get the next batch going which should be more peas before they go bad. The potatoes store longer so can get run this fall. Speaking of potatoes I got another 62 pounds dug over the day and have a ton more to go. Hopefully the cooler temps will stay so it will be a bit easier to work outside.

Very nice, did you blanch them first or straight off the vine?

Just straight. The boys rinsed them then popped the ends and strings off. I may cut them in half next time to make the peas inside dry faster.

Right on, I’ve found that blanching veggies seems to help. Last time I did green beans I did a batch straight and a batch blanched and it was unanimous that the blanched ones were better for snacking on.
