Got some beautiful beef shanks from my local butcher today 😍 It’s one of my favorite cuts for slow cooking. So, of course, I had to make Khao Soi for dinner. 🍜

Khao Soi is a comforting bowl from Northern Thailand and has influences from Burmese and Chinese Muslim cuisines, packed with deep flavors and warmth.

Slow-braised beef shanks in a rich, coconut curry broth, served with egg noodles two waysβ€”soft and silky, plus crispy fried for that perfect crunch. Topped it off with pickled mustard greens, shallots, chili oil, and a squeeze of lime. 🀀
