I ate one not ripe and it was so astringent i had to drink a beer to fix my mouth. Then today i picjed one up off the ground and it was so delicious i am determined to figure out harvest instead of just letting the pigs eat them since i have so many.

Persimmon finished pork is a premium product in my view. It so happens that persimmons are the last fruiting crop of the year so it's perfect timing for finishing hogs for weight gain. Some persimmon varieties can cling to the tree through January.
Again, this is just me conjecturing about finishing hogs but it makes sense to me.
I fucked up this year and dont have hogs for finishing i only have my breeders. I was supposed to have 30 piglets but instead learned about savaging. Only ended up with 6 and i already had promised another farmer 2/3rds of my piglet crop so he just gets them all.
But long term my plan is premium pork like mark shepherd
I dream of raising mast-finished hogs in specially designed silvopastures/forest orchards
