Pressure cooker on instant pot for a 2-2.5 lbs tongue for 1.25-1.5hrs for more firm texture or 2-2.15hrs for braised style. Let pressure come out naturally over an hour. I typically like to just use aromatics and water. Then when rested and cool I will peel and slice or pick whatever you prefer. Then I will add it to a sauce that I make during the cooking time of the tongue. Like mole, salsa negro, salsa verde, Hungarian pepper sauce, etc.

What do you mean by aromatics?

Like; bay leaf, thyme, peppercorns, star anise, cinnamon sticks, garlic cloves, mirepoix (carrot, onion and celery), cardamom, cloves, aka herbs and spices

Pressure cookers are amazing! For sure spices are a cheap way to add depth of flavor. If you love octopus I would highly recommend it using your pressure cooker.

I usually just do rice, hard boiled eggs, rice pudding, broth, quinoa, canning jars. What do you do mostly?
