Elephant ear(monstera) will take over if you give it sun and water. It cares not for temps below about 90*F, but it definitely won't do well in a freeze. I have one I have to cut back aggressively. It even thrived through 110* temps for 4 days when the AC failed and I was out of town. Its taken over half my kitchen and I've already given cuttings to everyone I know, so now I'm cutting it and throwing it away.
I've also had good luck with philodendron, spider plant, and aloe vera. They all survived the AC failure, but were a bit more challenged. They all had water from a little auto watering pump I got.
I've also had good luck with Basil if I change dirt frequently and clip it regularly so it grows bushy instead of spindly if you are looking for something you can cook with.
Pothos: hardy, color varies based off heavy to no sunlight and comes in different varieties.
If you somehow kill this plant it wasn’t an accident. It was full-blown murder.
