Combine mashed sweet potatoes into blender along with equal parts almond milk. I.e. 3cup sweet potato to 3cup Almond Milk.

Add 1/2 cup maple syrup, 2tsp vanilla, pinch of salt.

Blend to smooth

Last step after freezing overnight.

Let thaw a bit on the counter to be able to chop in smaller sizes.

Place Chopped soft frozen pieces in blender

Blend to smooth, then serve or refreeze.

There you have it. Vegan/Paleo Ice cream

I love the color of the end product, might have to try this.

It's such a unique flavor and color. I secretly hope nobody likes it so I can hoard it all lol!!
