3) What do the fees end up being? I find the only issue with bisq is typically have to pay 2-5% above current mkt price. Does bull BTC add 3% to their BTC mkt price ?

Home mining is the preferred way. Another way is LibertyX. Use silent.link for a burner number and you can use cash at gas stations. Usually up to $1000 a day with the phone number, fees tend to sit around 9% using cash.

my GF is wondering who is best for the occasional 'sell' from cold storage to fiat (yes KYC). In the past we've used CashApp but the are increasingly sucking at both UI and restrictive limits. The small limits make me suspicious that they are running a fractional reserve bitcoin op. Considering Swan, River... any other suggestions?
Honestly don't understand how people regard mobile apps which require names and/or phone numbers as kyc-free. Linking sats to people isn't done only with IDs...

here in Argentina the best so far is the LNP2P Telegram Bot
simple NO-KYC in local currency, it has low volume but it's good enough for my uses.
other options left NO-KYC is buying USDT and then unsing FixedFloat exchange, fixedfloat is NO-KYC, but you could buy USDT easily in a semi KYC and then use that for the BTC purchase

Peach are questionable. They are a regulated company in Switzerland and are required by their laws to comply with address message signing for the receiving party. They have therefore added "AOPP" which automatically signs a message using the Address private key. BTC buyers on Peach automatically sign a bitcoin message with the in-app wallet address which receives the bitcoin.
The signed message contains your Peach ID and the address which it is received to.
This signed message is held by Peach for 10 years (minimum), and will be provided if they are audited.
What’s questionable about that?!
For more privacy I guess if you use a new account on each trade then it's ok to avoid clustering trades if ever you were to get audited and give over customer info. IMO there's good and bad non KYC methods.
Needless to say I still think everyone is doing what they can and still beats KYC
