I don't love the beetroot we buy from the store. I think it would be in vinegar... I'm going to be growing my own, but I haven't looked into what I could do with them post harvest.

I will! Apparently my mum buys it fresh and pickles them herself. So I have to see if I can improve the taste of beetroot in my salads.
