I don't love the beetroot we buy from the store. I think it would be in vinegar... I'm going to be growing my own, but I haven't looked into what I could do with them post harvest.
Just different flavors. I like the spicy sweet but you can ferment anything you like.
Kimche, Giardiniera etc all similar techniques.
