We simply asked a farmer at our weekend farmer’s market who was selling beef. I believe most smaller farms do this if asked. It’s a more efficient way for them to offload their product.

First we did half a cow then a whole when we knew extended family would want a share of it.

Definitely the best beef we’ve ever had! And the cost per pound is 🔥

Yes they send it to a processing center and give you the cuts you request. Everything else becomes ground beef.

Ah, my bad. Sorry for dangling the carrot. In some ways it might be easier where you live. Just go knock on a farmers door, and tell them you want to give them money. The U.S. has ridiculous beef laws
