Oui Chef! Try Bearnaise next time. You can even use a blender to make it. Saffron is a cool addition.

I didn't have white wine or tarragon but will source both for next time. I did do the hollandaise with brown butter this time 🤙saffron sounds interesting!

For sure! You don’t necessarily need tarragon.

Are you talking kervel cause i think taragon is pretty essential in bearnaise

For the classic preparation yes, but recipes can be changed. I was suggesting to leave it out if not available and to use saffron instead or another herb. During winter tarragon can be hard to find.
