It got done quicker than I expected so it got a little over done. It went from 160ish to 210 in butcher paper in less than an hour. I wanted to take it off at 205

Yea it’s hard. Did you have a probe thermometer in it to alert you?

I don’t use it as much now but it definitely comes in handy, especially for cuts you’re unfamiliar with OR when they are a different size than you’re used to.

Yes it was good and everyone ate it. I had a wireless probe but couldn’t get it to sync. My grill had a prob but I didn’t have it set to alert me. I just wasn’t prepared for the cook like I should have been.
