Yummmm pickled sunchokes!
I make a delicious risotto with sunchokes. The flavor synergy between sunchokes, beets, bell peppers, roasted garlic, mushrooms, and parmesan is really unique and cool. Side benefit, when sunchokes are diluted with all those other vegetables and rice, Iβve never noticed their adverse effects. Pickled Iβm sure is even better.
