Trying out lacto-fermentation of my sunchokes. Long term, I will probably just use these plants as fodder. I also realized tonight that the sunchoke tubers are kind of like fractals, with symmetrical knobs shooting out, with each of those knobs having it's own set of symmetrical knobs. Pattern recognition.

Yummmm pickled sunchokes!

I make a delicious risotto with sunchokes. The flavor synergy between sunchokes, beets, bell peppers, roasted garlic, mushrooms, and parmesan is really unique and cool. Side benefit, when sunchokes are diluted with all those other vegetables and rice, I’ve never noticed their adverse effects. Pickled I’m sure is even better.
