Inflammatory, oxidative oils originally invented for lubing war machinery is bad for the human body, yet seed oils have replaced animal and fruit fats in nearly every grocery store, fast food place, and restaurant.
Study the data yourself:
Basic explanation is that they are industrial products high in oleic acid / omega-6 fatty acids and therefore highly inflammatory. Inflammation in the body is the root cause of all manner of autoimmune and metabolic issues. Then there are risks of oxidation and rancidity which lead to lots of health issues like cardiovascular problems.
On an environmental level, the monocropping involved in production and the processing of thr oils destroys ecosystems and pollutes water systems.
This, and there’s strong evidence that they are tied to a significant amount of obesity, our inability to be satiated with “modern” foods (ie overeating and malnutrition), myriad chronic illness, and cancers.
I don’t think it’s at all a coincidence that the major shift toward seed oils in literally all of our foods aligns perfectly with a huge rise in the chronic disease epidemic.
