Is there any AI platforms that guarantee what you type into it dont get recorded?, and or if you create something on it, who has legal rights to what was created with its assistance?, it's your thoughts and ideas going into it, the AI is basically expanding them.

Only offline apps like Jan can give some assurance of not recording what you type. But they still can't stop your phone from recording you or anything.
Usage rights vary from chat bot to chat bot. The "pricing" page will usually give a quick answer without digging through terms and conditions. I only use unpaid stuff, there are plenty of options that let you use the outputs freely.

Basically, the court system in most places won't let you do anything without at least a lawyer or some type of representative knowing your identity. But it doesn't generally have to be public. And even if you can't defend your copyright in court, that doesn't mean others are officially legally allowed to use your stuff without your permission, it just helps them get away with it
