I think you are looking for OBS. Or Audacity if just audio.

I use Zoom. Mostly because everyone has it and I don’t have to troubleshoot the tech.

I would not use OBS. It’s good for streamers but not for interviews.

JitsiMeet supposedly has recording. It’s open source. It’s sort of clunky to get a irl to schedule the meeting, but if you sort that out on the user end it’s great.

We have folks screen share in zoom and give them a clickable prototype or sometimes have them screen share their phone
