As a Catholic, we would consider our Church to be the Israel of the new covenant.

Not a Catholic, but hard agree. The writings of the early church (Ante-Nicene) supports this understanding of the Scripture. I say Ante nicene because those are the writings that I have read though I imagine later writings support it as well.
