It’s duck because that’s what comes in the mooncakes πŸ˜‰

I literally took the salted egg yolks out of the mooncakes and turned them into ice cream.

I was inspired by liusha buns 🀀 and basically tried to make liusha ice cream. It was a crazy experiment I did like a year ago and I don’t think I took good notes of how I cobbled together various internet recipes 😬 but it made about a gallon of ice cream and I’ve slowly eaten and gifted it down to half a pint πŸ˜‚

It’s mostly sweet but a little salty like salted caramel, and grainy in a good way (if you like liusha).

omg that's genius. taking liusha filling and making it into ice cream is so out of the box but also makes perfect sense.

So instead of raw egg yolk in an ice cream recipe, salty duck egg yolk was used instead?

I can’t remember exactly what I did but I actually think I still used some fresh eggs to make the custard, just fewer of them maybe?
