The problem is not to fear that they do extract your seed. The problem is that they admit they CAN! Since the software is closed source, you never can be sure they didnβt do anything with your seeds before
I don't see the interest for ledger to save all the seed phrases of each user. it would be very costly for them. They just offer a solution for the dizzy.
Storing all the seeds would cost almost nothing. Just add a new field to the user data base next to your email and phone number. Done.

And no, not any service can sniff your data. If a software is opensource, it is verifiable. Ledger is not open source, so you can never be 100% sure.
