Does your NIP-05 only exist on some of your relays? Or does it get broadcast to all your connected relays? I’m surprised how many prominent bitcoiners that come over from Twitter still don’t have one, that I can see at least. Every time I see one I check and we have relays in common, so it makes me think they just haven’t bothered to set one up.

NIP-05 don't exist in relays afaik. Clients query the URL and verify if your pubkey exists in that URL service server

But still clients individually query servers directly or they check relays and relays do the checking themselves?

nostrs general model is clients check things and in this case i think that holds but relays can and do check some things, the nostr software ecosystem is very diverse
