1. Lesser processor with 1TB SSD

2. Rysen 3 processor with 512 GB SSD

For what?

Small business printing labels, quick books, surfing internet, no gaming, not to much

Then whichever is cheaper. Can always buy new drive space.

I would go for the faster processor. Drive space can be freed up using external drives, or easily upgraded to a larger size.
