So the major complain that people have of graphene OS on a pixel is just the keyboard?

Pixel Camera on GrapheneOS works the same as it does on the stock OS.
Pixel phones have highly regarded cameras. Pixel 9 Pro and Pixel 9 Pro XL have fantastic camera hardware and are great devices for someone who cares about it. https://www.dxomark.com/smartphones/ has an expert comparison.

The keyboard is terrible yes, in many apps you can't press back space or it joins your words together and it's generally slower to type on for me anyway. Some may think it's acceptable. Thankfully it's easy to install another keyboard.

You can use whatever keyboard you prefer since they'll all work fine on GrapheneOS.
