There is likely zero reason for your Android keyboard app to have internet access.
Long press on the keyboard app icon, tap on App info and make sure it does not have the Network permission.

This is a big surprise for me, but Gboard doesn't even have such a clause in permissions

anysoftkeyboard doesnt request network access and works well, imo
HeliBoard is the best. I just love it.
