Dunno. Mom got me into that. I don't do it often. I now prefer to sear it in a hot pan before eating.

Yeah! The idea is that the steelworkers would just press it against one of the red-hot walls of the furnace, so it would scorch on the outside but it's so fast the inside is raw.
