Have you ever considered broiling then roasting or roasting them finish with the broiler? Thoughts on what you did.

I kinda did that. Did 475 for ten a side and then down to 275. Wasn’t thick enough to get a good crust. Could have done a super hot cast iron reverse sear. Might try that next time.
