Yep as a customer i have no problem committing to a deposit.

How far up your own arses do you have to be to behave like this? Yes I’d be happy to pay a deposit.

Chef's table booking should have a substantial deposit / hold on c/card. It's surely $60 pp , so 50% or $200 hold on the card.

Agreed, it's a one off, other tables can be filled, but there is only one chefs table.

Hold on card is a thing, I'd forgotten about that.

For a special chefs table, I have always seen some kind of ticket price, unless it was a private social club and they pay dues.

Yeh, that seems reasonable, there can only ever be one chefs table, so prepaying for it, even if you're not charging a deposit for others would be reasonable.

Also I would have started giving the table away to other customers at 8:30pm.
