There is literally no reason not to add an S when talking about multiple full coins, but i understand that some people feel strongly that you shouldn’t
“So-and-so has so much bitcoin” works and so does “so-and-so has so many bitcoins.” It is a choice and both options are valid, with slightly different meanings
The former could mean some relatively large fraction of one bitcoin while the latter makes it clear grammatically that there are 2+ whole coins being referred to
In my tongue in cheek comment, i specifically chose to imply using this grammatical option that even 21M would be too many, as there will ultimately be slightly less once all satoshis (or is it all satoshi? 🥴) have been issued

The good thing about bitcoin is there is no single truth. There is a collective truth that is recorded and maintained on a ledger and anything not part of consensus is unimportant. 🤙
All the bitcoin would be too much, definitely, because nobody else would have any so it wouldn't be worth anything either. Distribution is key.
On an institution level, I guess the amount of bitcoin Blackrock wants to own is probably too much.
On an individual level, more than the amount of Fiat one is prepared to lose, converted to sats.
