At a bare minimum, chop and freeze, use in various everything pot meals, especially making stock

I used to make pesto but last year I made a “relish” to freeze and used it on everything! Slice into thin rounds, add oil, vinegar, salt, pepper, orange rind, all to your taste, plus whatever else inspires to be added. Toss, let sit to macerate and put into containers or jars of your choice.

I don’t but curious to see what you end up doing with it
