Over the past 6 million years the human gut has evolved away from our herbivore/frugivore relatives.

This is why meat/eggs/seafood must make up the majority of your diet, or your health will suffer.

just spitballin but isnt that difference more about humans being able to use fire to cook food. cooking is essentially predigestion so you don’t necessarily need the same microbiome to break down plant matter

Cooking doesn't help with fibre nor does it put non-existing nutrients in.

Doesn't matter, cooking doesn't break down fiber unless you light it on fire. But then you're eating char.
