You should be able to set up the 2x NVMEs as ZFS mirror during OS install.

I want to transfer my current start9 to the new hardware and was planning on doing it via their Transfer function... Would I still be and to set up ZFS? Any guides you can point me to?
I am not really familiar with Start9- how does it install, do you run the installer over Ubuntu? If so you should be able to set up zfs during Ubuntu setup, then install Start9 on top. Umbrel used to work this way but they changed it in the latest release so not exactly sure how it works with Start9
Ooo, might need to try another setup. I was installing start9 os directly from a flashed USB drive... I'll dig around... Appreciate pointing me in the right direction
Hm yeah in that case it seems the same as Umbrel, so it may not be possible. Best to check directly with Start9 support?
