Anyone processing their own poultry I can highly recommend you look into pithing. It’s so much cleaner than cones or guillotines and much less stressful for the bird and the humans.

Do you just cut the jugular to bleed directly after?
We hang it by the feet and the blood collects in the head. But you could bleed it if you like, I don’t think it’s necessary.
