Discard was whatever we scooped out per our feeding regime. Then I added milk to land the right consistency. And then the kid dumped in blue food dye

Having the patience to allow any pan - particularly cast iron - to slowly come up to the right temperature is key to cooking almost anything.... and I'm way too often smacking myself after the fact for not having exercised that patience.

My unsolicited 2 cents after glancing at the recipe:
I see they have the acidity from the sourdough mixture but I still would use buttermilk. Also for a little extra fluffiness, whip the egg whites and fold them into the mixture last, after adding the baking powder on day 2
