Good stuff. Never had biltong. Just ordered a couple different things to see what I like best before I look into a monthly subscription going forward.

Would mushroom ketchup have a similar effect to Worcester sauce in tenderizing the meat?

Could/should you make biltong using organ meats? Beef heart, liver, spleen,or kidney.
